I start this as a new topic, but it's really just a continuation like Summer (usually) follows Spring :-).
We are still cooking in our lovely sunny, Summer (FT)kitchen and I'm sure it's not a lie to say that there are vacant chairs at the table, so take a
seat and enjoy the dish we are going to serve you........

It's funny but the Obvious Gossip Summer recipes are all soups - I've chosen the tomato soup because it
was the recipe that actually introduced "Cooking with the Stars" in the long ago Summer of 1993 (the glorious days of Ingenué).
It was introduced with these words:
Many of you over the past couple of years have shown an interest in vegetarian cooking and have requested some of k.d's favorite recipes. To follow
is a wonderful soup that k.d. prepares on a regular basis - one that's light and delicous for all the hot summer nights to come. Give it a try and expose
yourselves to the culinary delights that vegetarian cooking has to offer!
Tomato Soup with Basil
Ingredients: 1 onion, 1 tablespoon butter, 2 medium potatoes (diced), 1 pound of tomatoes, 1 quart of *vegetable stock, freshly ground black pepper and fresh
basil sprigs.
1. Saute the onion in butter for 5 minutes, do not brown however.
2. Add potatoes, cover and cook gently for 5 to 10 minutes.
3. Add peeled tomatoes and cook stirring occasionally for 5 more minutes.
4. Add vegetable stock, cover and simmer for 15-20 minutes until potatoes
are tender.
5. Puree the soup in a food processor.
6. Re-heat gently without boiling.
7. Serve in warmed bowls with basil sprigs and fresh ground pepper.
Accompany this soup with a warm herbed bread, a tossed green salad and your favorite chilled summer beverage (a white wine is lovely) and enjoy this meal
with a view of the setting sun.
*Vegetable stock:
Put an onion, some garlic cloves, celery stick, carrot, and parsley into a sauce pan. Cover generously with water and simmer for 1 hour. Strain and presto -
instant veggie stock!
(Well, I do believe this is the right way to do it, but I also think OSCAR veggie stock would be perfect and save you some cooking time :-)).

kd. She sits as a well-behaved child. Bowed head and a napkin fixed as a bib under her chin. The other woman - sitting opposite kd - yes, who can she be?,
it's not easy to see but my guess is Darlene or Sue Leonard (one of the two "old " background singers) - soon delicious soup will fill the bowl
and the images vanish - but only for a while.....
