Dairy Free Tofu Cheesecake
1 cup soymilk
3 tablespoons agar flakes
1 1/2 cups crumbled tofu
1tablespoon vanilla
1/4 cup lemon juice
1 tablespoon finely grated organic lemon rind
1/2 cup fructose
1 tablespoon carob powder(optional, makes it taste like chocolate)
1 prepared 8-9 inch pie crust
Heat the soymilk and agar in a saucepan until boiling. Reduce the heat and simmer for 2 minutes.
Place the tofu, vanilla, lemon juice, lemon rind, and sweetner into a blender. Add the hot agar mixture, and blend until smooth.
Add the carob powder, if desired. Pour the filling into a pie crust, and chill until firm. Top with your favorite fruit,
