This is supposed to be a vegetable dish for dinner, but I think it is more of a desert. It is similar in flavour to a pumpkin pie. It is rich and very sweet, you may want to cut the sugar in half. It is good either with canned or fresh baked sweet potatoes. Some people like to add a dash of orange flavouring to it. I love it eaten cold!
Sweet Potato Casserole
3 cups cold mashed sweet potatoes (prepared without milk or butter)
1 cup sugar
1/2 cup milk (I use canned evaporated milk, some people use half and half cream)
1/4 cup butter
3 eggs
1tsp salt
1tsp vanilla
TOPPING:
1/2 cup packed brown sugar
1/2 cup chopped pecans
1/4 cup flour
2 TBSP cold butter or margarine
Mix sweet potatoes, sugar, milk, eggs, salt, vanilla until smooth. Transfer to a 2qt greased baking dish. In a small bowl combine the topping until crumbly. Sprinkle over potato mixture. Bake uncovered at 325 degrees for 45-50 minutes or until golden
